Asparagus season is here! I went out today and when I saw an asparagus stand, I couldn’t resist buying some beautiful green asparagus. I had an immediate idea what to do with them—all this freshness just belongs in a salad bowl, don’t you think? So I came back home and whipped up a quick, but sooo delicious, shaved asparagus and radish salad. I used some of my mint pesto for the dressing. Oh my yummy!
Don’t throw away the asparagus tips when they break off during the shaving. I like to sauté them in a little olive oil and add them to the salad—it gives it another texture and flavor, and creates depth. Oh là là, that was such a terrible cliché 😉 It’s still true though!
For the dressing, I mixed some home made yogurt with a couple of spoonfuls mint pesto, added some salt and pepper, a solid squeeze of lemon juice and olive oil. This awesome dressing is so fresh you’ll practically feel the summer breeze You can adjust it to your taste, just make sure to try it while making it! I’m addicted to lemon, so I added lots of lemon juice, but that’s me. Toss the salad with the dressing and leave it 10 minutes to soak in all the goodness.
When serving it, crumble some feta on top—mint, yogurt and feta are a classic Mediterranean combo. Actually, now that I think about it, if you have some lamb filet in the fridge, you can sear it, slice it thin and add it to the salad. I bet it will taste out of this world!
There was practically nothing left when everybody came home from work. I ate it all! All mine, all mine, all…Ugh, apparently, spring brings out the crazy in me.
Asparagus And Radish Spring Salad
- 500g green asparagus
- 1 bunch radishes
- 3 tsp mint pesto
- 5-6 tsp yogurt
- salt & pepper
- olive oil
- lemon juice
- 50g feta
- Shave the asparagus and radishes.
- Make the dressing—mix the mint pesto, yogurt, lemon juice, salt, and pepper.
- Toss salad with the dressing and set aside.
- Sauté the asparagus tips in a little bit of olive oil. Season to taste.
- Put the salad together—fresh shavings, then the sautéd tips and finally the crumbled feta. Season to taste.
